4 thick centercut pork chops (bone-in)
Bourbon Glaze: 2 cups apple cider
1/2 cup honey
1/4 cup apple cider vinegar
2 TBL. brown sugar
1/3 cup whiskey/bourbon (such as Jack Daniels®)
3 TBL.whiskey/bourbon (such as Jack Daniels®)
Heat cider, honey, cider vinegar and brown sugar is saucepan over medium heat. Bring to a simmer then reduce heat to low; simmer stirring often, about 20 minutes or until mixture is reduced to 2/3 cup. In separate small saucepan over lowmedium heat, simmer whiskey for 10 minutes; stir into apple cider mixture and reduce to 1/2 cup glaze. Let cool. Stir 3 TBL. whiskey into cider glaze. Season pork chops on both sides with salt and pepper to taste. Pour 1/2 of glaze into bottom of soaked Romertopf and top with pork chops. Pour remaining glaze over the chops. Place lid on baker and put in oven. Set oven temperature to 425 degrees Fahrenheit and bake 1 hour or until chops are tender. Let sit, covered, 15 minutes before serving.
