Easy Au Gratin Potatoes

Ingredients:    

5 cups peeled  thinly sliced potatoes (russet or gold)

3 Tbl. butter or margarine

3 Tbl. all­purpose flour

2 cups milk

1 cup shredded cheddar or swiss cheese

1 teaspoon salt, or to taste

1/4 teaspoon coarsely cracked black pepper, or to taste

1/2 cup chopped onion  

Preparation:  

Make a roux by melting the butter over low­medium heat in large saucepan, then adding flour, salt  pepper.  Cook, stirring constantly, about 1 minute.  Slowly stir in milk and gently bring to a boil.  Continue to cook and stir about 2­-3 minutes or until sauce has thickened.  Remove from heat, stir in the cheese, potatoes and onions.    Generously grease the clay baker bottom and pour in potato mixture, spreading evenly.  Cover with moist clay baker lid and set in cold oven.  Set oven temperature to 425°F and bake 1 hour.  Remove lid and continue baking about 30 minutes or until potatoes are tender and top is golden. Let stand 5-10  minutes.
