A rather lean meat, lamb is generally tender and not too fatty, so adding a bit of liquid, whether it be stock, wine or even just water will ensure a moist, tender result.   Young lamb generally has a mild flavor and will not have much of an odor compared to an older lamb (known as mutton)  To remove the strong odor, trim as much fat as possible and soak the lamb in milk overnight.  Discard the milk, rinse the lamb thoroughly and continue with the recipe.
